- 1 (20 oz) can pineapple chunks, drained (reserve 1/4 cup juice)
- 1 (20 oz) can crushed pineapple, drained
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 2 cups shredded sharp cheddar cheese
- 1 sleeve Ritz crackers (about 30), crushed
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9 inch or similar size baking dish.
- In a large bowl, mix together the sugar and flour.
- Add both the pineapple chunks and crushed pineapple, along with the reserved juice. Stir to combine.
- Fold in the shredded cheddar cheese.
- Pour the mixture into the prepared baking dish and spread evenly.
- In a separate bowl, mix the crushed Ritz crackers with melted butter until well coated.
- Sprinkle the cracker topping evenly over the pineapple mixture.
- Bake for 25–30 minutes, or until the top is golden and the casserole is bubbly around the edges.
- Let sit for 5–10 minutes before serving warm.
