Scale
- 12 pre-made mini tart shells
- 1 cup granulated sugar
- 6 tbsp unsalted butter, cut into cubes
- 1/2 cup heavy cream
- 1 tsp sea salt
- 1/2 cup dark chocolate chips
- 1/4 cup heavy cream (for chocolate ganache)
- Sea salt flakes, for garnish
Instructions
- Place the pre-made tart shells on a tray and set aside.
- In a saucepan over medium heat, melt the sugar while stirring constantly until it turns into an amber-colored liquid.
- Add the butter and stir until fully melted and combined.
- Slowly add 1/2 cup heavy cream (be cautious, it may bubble) and stir until smooth.
- Stir in sea salt and let the caramel cool slightly before spooning into tart shells. Fill each tart about 2/3 full with caramel.
- In a separate small saucepan, heat 1/4 cup heavy cream until just simmering, then pour over chocolate chips. Let sit for 1 minute, then stir until smooth.
- Spoon chocolate ganache over the caramel layer in each tart shell.
- Sprinkle with sea salt flakes and refrigerate for at least 1 hour before serving.
Notes
- You can use homemade or store-bought tart shells for convenience.
- Ensure caramel is not too hot before adding to tart shells to avoid softening them.
- For a richer taste, use high-quality dark chocolate.
