Instructions
- Place chopped chocolate in a heatproof bowl.
- In a small saucepan, heat the cream over medium heat until it just begins to simmer. Do not boil.
- Pour hot cream over the chocolate and let sit for 2–3 minutes to melt.
- Add butter (if using) and vanilla extract, then stir gently until smooth and fully combined.
- Cover and refrigerate the mixture for 1–2 hours, or until firm enough to scoop.
- Using a spoon or melon baller, scoop out small portions and roll into balls with your hands.
- Roll each truffle in your desired coating and place on a parchment-lined tray.
- Chill for another 15–30 minutes before serving, or store in an airtight container in the fridge.
