- 2 large boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
- 1 cup chicken broth
- 1/2 cup diced onion
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 8 oz spaghetti noodles, broken in half
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 4 oz cream cheese, cubed
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Add Ingredients to CrockPot:ย Place the chicken breasts in the bottom of the slow cooker. Add the cream of chicken soup, Rotel tomatoes, chicken broth, diced onion, garlic powder, onion powder, paprika, salt, and black pepper. Stir slightly to combine.
- Cook:ย Cover and cook onย lowย for 6-7 hours or onย highย for 3-4 hours, until the chicken is cooked through and tender.
- Shred the Chicken:ย Remove the chicken from the CrockPot, shred it using two forks, and return it to the slow cooker.
- Add Noodles and Cheese:ย Break the spaghetti noodles in half and add them to the slow cooker along with the shredded chicken. Stir to coat the noodles in the sauce. Add cream cheese cubes, cheddar cheese, and Parmesan.
- Cook Until Pasta Is Done:ย Cover and cook onย highย for an additional 20-30 minutes, stirring occasionally, until the pasta is tender and the cheese is melted.
- Serve:ย Garnish with chopped fresh parsley if desired. Serve warm and enjoy!
