These easy croissant breakfast sandwiches are perfect for busy mornings. Flaky croissants are filled with eggs, cheese, and your choice of breakfast meat for a satisfying and delicious start to the day.

- 4 croissants, halved
- 4 large eggs
- 4 slices cheddar cheese
- 4 slices cooked bacon or breakfast sausage
- 2 tbsp milk
- 1 tbsp butter
- Salt and pepper, to taste
Instructions
- Preheat oven to 350ยฐF (175ยฐC).
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Heat butter in a non-stick skillet over medium heat. Pour in egg mixture and scramble until fully cooked.
- Slice croissants in half and layer each bottom half with scrambled eggs, a slice of cheese, and a piece of bacon or sausage.
- Top with the other half of the croissant.
- Place assembled sandwiches on a baking sheet and bake for 5-7 minutes, or until the cheese is melted and the croissants are warm.
- Serve immediately.
Notes
- You can substitute cheddar with Swiss or American cheese.
- Make them vegetarian by skipping the meat or using plant-based alternatives.
- Prepare ahead and reheat in the oven or microwave.
