- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- Lemon Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons fresh lemon juice
- 1/2 teaspoon lemon zest (optional, for extra zing)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in the egg, lemon zest, and lemon juice until well combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- In a small bowl, whisk together powdered sugar and lemon juice until smooth. Add lemon zest if desired.
- Once cookies are completely cool, drizzle or dip in the lemon glaze. Let set before serving.

- Use fresh lemon juice and zest for the brightest flavor.
- Adjust the glaze thickness by adding more lemon juice or powdered sugar as needed.
- Store cookies in an airtight container for up to 4 days.
