Description

These Easy Ground Beef Enchiladas are a hearty, flavorful, and satisfying Mexican-inspired dish made with seasoned beef, tortillas, cheese, and a rich enchilada sauce. Perfect for a weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 (10 oz) can red enchilada sauce
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil
  • Optional toppings: sour cream, chopped cilantro, diced tomatoes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3 minutes.
  3. Add garlic and cook for 30 seconds. Then add ground beef and cook until browned, breaking it up with a spoon.
  4. Drain any excess fat and stir in chili powder, cumin, paprika, salt, and pepper. Cook for 2 more minutes.
  5. Add 1/4 cup of enchilada sauce to the meat mixture and stir to combine. Remove from heat.
  6. Spread 1/2 cup of enchilada sauce on the bottom of a 9×13 inch baking dish.
  7. Spoon beef mixture into each tortilla, top with some cheese, roll up, and place seam-side down in the baking dish.
  8. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  9. Cover with foil and bake for 20 minutes. Then uncover and bake for another 10 minutes or until cheese is bubbly.
  10. Let rest for 5 minutes before serving. Top with optional toppings if desired.

Notes

  • Use corn tortillas for a more traditional flavor.
  • Can be assembled ahead of time and baked later.
  • Great with a side of rice and beans.
