These Easy Ground Beef Enchiladas are a hearty, flavorful, and satisfying Mexican-inspired dish made with seasoned beef, tortillas, cheese, and a rich enchilada sauce. Perfect for a weeknight dinner.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 (10 oz) can red enchilada sauce
- 8 small flour tortillas
- 2 cups shredded cheddar cheese
- 1 tbsp olive oil
- Optional toppings: sour cream, chopped cilantro, diced tomatoes
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3 minutes.
- Add garlic and cook for 30 seconds. Then add ground beef and cook until browned, breaking it up with a spoon.
- Drain any excess fat and stir in chili powder, cumin, paprika, salt, and pepper. Cook for 2 more minutes.
- Add 1/4 cup of enchilada sauce to the meat mixture and stir to combine. Remove from heat.
- Spread 1/2 cup of enchilada sauce on the bottom of a 9×13 inch baking dish.
- Spoon beef mixture into each tortilla, top with some cheese, roll up, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
- Cover with foil and bake for 20 minutes. Then uncover and bake for another 10 minutes or until cheese is bubbly.
- Let rest for 5 minutes before serving. Top with optional toppings if desired.
Notes
- Use corn tortillas for a more traditional flavor.
- Can be assembled ahead of time and baked later.
- Great with a side of rice and beans.
