- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 6–8 tablespoons ice water
- 6 cups thinly sliced apples (Granny Smith, Honeycrisp, or a mix)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour (for thickening filling)
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- 1 tablespoon coarse sugar (optional, for topping crust)
Instructions
- In a large bowl, mix flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, mixing just until the dough comes together. Divide dough in half, shape into disks, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 425ยฐF (220ยฐC).
- In a large bowl, toss sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Set aside.
- Roll out one disk of dough on a floured surface to fit a 9-inch pie dish. Place dough in the dish and trim the edges.
- Pour apple filling into the crust and spread evenly.
- Roll out the second disk and place over the filling. Trim, seal, and crimp the edges. Cut a few slits in the top to allow steam to escape.
- Whisk together egg and milk, then brush over the top crust. Sprinkle with coarse sugar if desired.
- Bake for 45-50 minutes, covering the edges with foil halfway through if browning too quickly.
- Cool at room temperature for at least 2 hours before slicing. Serve as is or with a scoop of vanilla ice cream.
