Description

This easy homemade apple pie features a flaky, buttery crust and a perfectly spiced apple filling, making it the ultimate classic dessert for holidays or any cozy occasion.

Ingredients

Units Scale
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 68 tablespoons ice water
  • 6 cups thinly sliced apples (Granny Smith, Honeycrisp, or a mix)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour (for thickening filling)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping crust)

Instructions

  1. In a large bowl, mix flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Add ice water, one tablespoon at a time, mixing just until the dough comes together. Divide dough in half, shape into disks, wrap in plastic, and chill for at least 1 hour.
  3. Preheat oven to 425ยฐF (220ยฐC).
  4. In a large bowl, toss sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Set aside.
  5. Roll out one disk of dough on a floured surface to fit a 9-inch pie dish. Place dough in the dish and trim the edges.
  6. Pour apple filling into the crust and spread evenly.
  7. Roll out the second disk and place over the filling. Trim, seal, and crimp the edges. Cut a few slits in the top to allow steam to escape.
  8. Whisk together egg and milk, then brush over the top crust. Sprinkle with coarse sugar if desired.
  9. Bake for 45-50 minutes, covering the edges with foil halfway through if browning too quickly.
  10. Cool at room temperature for at least 2 hours before slicing. Serve as is or with a scoop of vanilla ice cream.

Notes

  • Chill your dough and use cold butter for the flakiest crust.
  • Use a mix of tart and sweet apples for balanced flavor.
  • Leftover pie can be stored covered at room temperature for up to 2 days or refrigerated for 4-5 days.
