Description

This Easy Italian Baked Chicken is juicy, herby, and bursting with classic Italian flavors. It’s a one-pan, no-fuss recipe that’s great for family dinners, meal prep, or entertaining. Serve it with pasta, rice, or veggies for a complete and comforting meal.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried Italian seasoning

  • 1/2 tsp dried basil

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 cup cherry tomatoes, halved

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • Fresh basil or parsley, for garnish

  • Optional: balsamic glaze for drizzling


Instructions

  • Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.

  • Season the chicken:
    Place chicken breasts in the dish. Drizzle with olive oil, then sprinkle with garlic powder, onion powder, Italian seasoning, basil, salt, and pepper. Rub to coat evenly.

  • Add toppings:
    Scatter cherry tomatoes around and on top of the chicken. Sprinkle mozzarella and Parmesan over everything.

  • Bake:
    Bake uncovered for 25–30 minutes, or until the chicken is cooked through and reaches 165°F (74°C). Broil for 2–3 minutes at the end for a golden cheesy top, if desired.

 

  • Garnish and serve:
    Let rest for a few minutes. Garnish with chopped fresh basil or parsley. Drizzle with balsamic glaze if using, and serve hot.


Notes

  • Swap mozzarella for provolone or fontina for a fun twist.

  • Add sliced bell peppers, zucchini, or spinach for extra veggies.

 

  • Great served over spaghetti, garlic bread, or a fresh salad.
