Ingredients

For the Blackened Cod:

  • 4 cod fillets (about 6 oz/170g each)

  • 1 tablespoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon cayenne pepper (adjust to taste)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons olive oil

For the Lemon-Garlic Butter Sauce:

  • 2 tablespoons unsalted butter

  • 3 garlic cloves, minced

  • Juice of 1 lemon

  • 2 tablespoons fresh parsley, chopped (for garnish)

  • Lemon wedges (for serving)


Instructions

  1. Prepare the Blackening Seasoning:
    In a small bowl, mix together the smoked paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper.

  2. Season the Cod:
    Pat the cod fillets dry with paper towels. Rub the blackening seasoning evenly over both sides of the fillets.

  3. Cook the Cod:
    Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove the cod from the skillet and set aside.

  4. Make the Lemon-Garlic Butter Sauce:
    Reduce the heat to medium. Add the butter to the skillet and let it melt. Stir in the minced garlic and cook for 1 minute until fragrant. Add the lemon juice and stir to combine.
