  • 12 oz (340g) pasta (penne, fusilli, or spaghetti)
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the crushed tomatoes, vegetable or chicken broth, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper. Stir well to combine.
  4. Add the pasta directly into the pot, making sure it is submerged in the liquid. Cover the pot and bring the mixture to a boil.
  5. Reduce the heat to low and simmer for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
  6. Stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes until the sauce is creamy and the pasta is fully coated.
  7. Taste and adjust seasoning if necessary.
  8. Garnish with fresh basil and serve immediately.
