Scale
- 1 cup uncooked white rice
- 2 cups water
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Optional toppings: ground cinnamon, raisins, or fresh fruit
Instructions
- Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the water is absorbed.
- Prepare the Pudding: In a separate large saucepan, combine the cooked rice, 3 cups of milk, sugar, and salt. Cook over medium heat, stirring frequently, until the mixture becomes thick and creamy, approximately 15 to 20 minutes.
- Add Remaining Milk: Stir in the remaining 1 cup of milk and continue to cook for an additional 5 minutes, stirring constantly to prevent sticking.
- Flavor: Remove the saucepan from the heat and stir in the vanilla extract.
- Serve: Transfer the rice pudding to serving dishes. If desired, sprinkle with ground cinnamon, stir in raisins, or top with fresh fruit. Serve warm or refrigerate and serve chilled.
Notes
- For a richer flavor, consider using half-and-half or adding a tablespoon of unsalted butter when stirring in the vanilla extract.
- To prevent a skin from forming on top as it cools, place a piece of plastic wrap directly on the surface of the pudding.
- This pudding can be stored in the refrigerator for up to 3 days.
