Description

This creamy rice pudding is a comforting dessert made with just a few simple ingredients. It’s lightly sweetened and flavored with vanilla, making it perfect for any occasion.

Ingredients

Units Scale
  • 1 cup uncooked white rice
  • 2 cups water
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional toppings: ground cinnamon, raisins, or fresh fruit

Instructions

  1. Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the water is absorbed.
  2. Prepare the Pudding: In a separate large saucepan, combine the cooked rice, 3 cups of milk, sugar, and salt. Cook over medium heat, stirring frequently, until the mixture becomes thick and creamy, approximately 15 to 20 minutes.
  3. Add Remaining Milk: Stir in the remaining 1 cup of milk and continue to cook for an additional 5 minutes, stirring constantly to prevent sticking.
  4. Flavor: Remove the saucepan from the heat and stir in the vanilla extract.
  5. Serve: Transfer the rice pudding to serving dishes. If desired, sprinkle with ground cinnamon, stir in raisins, or top with fresh fruit. Serve warm or refrigerate and serve chilled.

Notes

  • For a richer flavor, consider using half-and-half or adding a tablespoon of unsalted butter when stirring in the vanilla extract.
  • To prevent a skin from forming on top as it cools, place a piece of plastic wrap directly on the surface of the pudding.
  • This pudding can be stored in the refrigerator for up to 3 days.
