Instructions
- Preheat and Prep โ Preheat your oven to 425ยฐF (220ยฐC). Line a large rimmed sheet pan with parchment paper or foil for easy cleanup.
- Parboil the Potatoes โ Fill a medium pot with water and bring to a boil. Add the halved potatoes and cook for 8-10 minutes, until just barely tender. Drain well and set aside. (This ensures the potatoes are cooked through when roasted.)
- Assemble the Sheet Pan โ Spread the parboiled potatoes, corn pieces, and sliced sausage evenly over the sheet pan. Drizzle with about half of the melted butter and oil mixture, sprinkle with half the Old Bay, salt, and pepper. Toss to coat.
- Roast, Then Add Shrimp โ Roast the pan for 15 minutes. Meanwhile, toss the shrimp with the remaining butter, oil, garlic, Old Bay, paprika, and a pinch of salt and pepper. After 15 minutes, add the seasoned shrimp evenly over the pan and roast 8-10 more minutes until shrimp are just opaque and pink.
- Serve โ Remove from the oven. Sprinkle with chopped parsley, squeeze over lemon juice, and serve straight from the pan with extra Old Bay and more lemon wedges as desired. Enjoy!
