- 1 sheet refrigerated pie crust (or homemade)
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh basil, finely chopped
- 1 egg (for egg wash)
- 1 tbsp coarse sugar (optional, for sprinkling)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine strawberries, sugar, cornstarch, lemon juice, lemon zest, and chopped basil. Mix gently until evenly coated.
- Roll out the pie crust on the prepared baking sheet.
- Spoon the strawberry mixture onto the center of the crust, leaving a 2-inch border.
- Fold the edges of the crust over the filling, pleating as needed to enclose the filling partially.
- Beat the egg and brush it over the crust edges. Sprinkle with coarse sugar if using.
- Bake for 35–40 minutes or until the crust is golden brown and the filling is bubbly.
- Let cool slightly before serving.
Notes
- Use very ripe strawberries for maximum sweetness and flavor.
- You can substitute basil with mint for a different twist.
- Serve with whipped cream or vanilla ice cream for added indulgence.
