Description

  • 1 sheet refrigerated pie crust (or homemade)
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh basil, finely chopped
  • 1 egg (for egg wash)
  • 1 tbsp coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine strawberries, sugar, cornstarch, lemon juice, lemon zest, and chopped basil. Mix gently until evenly coated.
  3. Roll out the pie crust on the prepared baking sheet.
  4. Spoon the strawberry mixture onto the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the filling, pleating as needed to enclose the filling partially.
  6. Beat the egg and brush it over the crust edges. Sprinkle with coarse sugar if using.
  7. Bake for 35–40 minutes or until the crust is golden brown and the filling is bubbly.
  8. Let cool slightly before serving.
