Description

These Easy Strawberry Tea Sandwiches are the perfect addition to your afternoon tea or party spread. Made with fresh strawberries, cream cheese, and soft bread, they are light, sweet, and elegant. Quick to prepare and sure to impress your guests!

Ingredients

Scale
  • 8 slices white sandwich bread (crusts removed)
  • 4 oz (113 g) cream cheese, softened
  • 1 tbsp honey or powdered sugar (optional, for sweetness)
  • 1/2 tsp vanilla extract
  • 1 cup fresh strawberries, thinly sliced
  • Optional garnish: fresh mint leaves

Instructions

  • Prepare the spread:ย In a small bowl, mix the cream cheese, honey (if using), and vanilla extract until smooth and creamy.
  • Assemble the sandwiches:ย Spread a thin layer of the cream cheese mixture onto one side of each slice of bread.
  • Add the strawberries:ย Layer the sliced strawberries evenly on half of the bread slices.
  • Close the sandwiches:ย Top with the remaining slices of bread, cream cheese side down.
  • Trim and cut:ย Using a sharp knife, trim the crusts (if not already done) and cut each sandwich into halves, quarters, or decorative shapes, as desired.
  • Serve:ย Arrange on a serving platter and garnish with fresh mint leaves, if desired. Serve immediately.

Notes

  • For a softer filling, you can mash some strawberries and mix them into the cream cheese.
  • Use whole grain or rye bread for a twist.
  • These sandwiches are best served fresh but can be stored in the refrigerator for up to 4 hours.
