  • 1/4 cup water
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn (fresh, canned, or thawed frozen)
  • 1 avocado, diced
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup diced red onion
  • 1 cup tortilla chips, slightly crushed
  • 1/2 cup sour cream or Greek yogurt (for topping)
  • 1/2 cup salsa (for topping)
  • Fresh cilantro, chopped (for garnish)

Instructions

  • Cook the Ground Beef:
    Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles with a spatula. Drain excess fat if needed.
  • Season the Beef:
    Add the taco seasoning mix and water to the skillet. Stir well and let it simmer for 2โ€“3 minutes. Remove from heat and set aside.
  • Assemble the Salad:
    In a large bowl, layer the chopped romaine lettuce, cherry tomatoes, shredded cheddar cheese, black beans, corn, avocado, black olives, and red onion.
