- 1/2 cup corn (fresh, canned, or thawed frozen)
- 1 avocado, diced
- 1/4 cup sliced black olives (optional)
- 1/4 cup diced red onion
- 1 cup tortilla chips, slightly crushed
- 1/2 cup sour cream or Greek yogurt (for topping)
- 1/2 cup salsa (for topping)
- Fresh cilantro, chopped (for garnish)
Instructions
- Cook the Ground Beef:
Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into crumbles with a spatula. Drain excess fat if needed. - Season the Beef:
Add the taco seasoning mix and water to the skillet. Stir well and let it simmer for 2โ3 minutes. Remove from heat and set aside. - Assemble the Salad:
