For the Teriyaki Chicken:
- 1 lb (450 g) chicken breast, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1/3 cup soy sauce
- 1/4 cup honey
- 1 tablespoon rice vinegar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- Sesame seeds (for garnish)
- Green onions, sliced (for garnish)
For the Fried Rice:
- 2 cups cooked and chilled white rice (day-old is best)
- 2 tablespoons sesame oil or vegetable oil
- 2 eggs, lightly beaten
- 1 cup frozen peas and carrots mix
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
For the Teriyaki Chicken:
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until golden and cooked through, about 6โ8 minutes.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Pour the sauce over the chicken and stir to coat.
- Reduce heat to medium and simmer for 2โ3 minutes. Add the cornstarch slurry and stir until the sauce thickens.
- Remove from heat and garnish with sesame seeds and green onions. Set aside.
For the Fried Rice:
- Heat sesame oil in a large skillet or wok over medium heat. Add the eggs and scramble until fully cooked. Remove and set aside.
- Add the peas and carrots to the skillet and cook until tender, about 3 minutes.
- Stir in the rice, soy sauce, garlic powder, salt, and pepper. Mix well and cook for 5 minutes, stirring occasionally.
- Add the scrambled eggs back into the skillet and mix until evenly distributed.
To Serve:
- Serve the teriyaki chicken over the fried rice or alongside it. Enjoy!
Notes
- Day-old rice works best for fried rice as it doesnโt clump together.
- You can substitute chicken thighs for chicken breasts if preferred.
- Adjust soy sauce and honey for sweetness or saltiness to taste.
