For the Teriyaki Chicken:

  • 1 lb (450 g) chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • Sesame seeds (for garnish)
  • Green onions, sliced (for garnish)

For the Fried Rice:

  • 2 cups cooked and chilled white rice (day-old is best)
  • 2 tablespoons sesame oil or vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup frozen peas and carrots mix
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

For the Teriyaki Chicken:

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until golden and cooked through, about 6โ€“8 minutes.
  2. In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Pour the sauce over the chicken and stir to coat.
  3. Reduce heat to medium and simmer for 2โ€“3 minutes. Add the cornstarch slurry and stir until the sauce thickens.
  4. Remove from heat and garnish with sesame seeds and green onions. Set aside.

For the Fried Rice:

  1. Heat sesame oil in a large skillet or wok over medium heat. Add the eggs and scramble until fully cooked. Remove and set aside.
  2. Add the peas and carrots to the skillet and cook until tender, about 3 minutes.
  3. Stir in the rice, soy sauce, garlic powder, salt, and pepper. Mix well and cook for 5 minutes, stirring occasionally.
  4. Add the scrambled eggs back into the skillet and mix until evenly distributed.

To Serve:

  • Serve the teriyaki chicken over the fried rice or alongside it. Enjoy!

Notes

  • Day-old rice works best for fried rice as it doesnโ€™t clump together.
  • You can substitute chicken thighs for chicken breasts if preferred.
