This Easy Cottage Cheese Flatbread is a high-protein, low-carb alternative to traditional wraps or bread. Made with just a few wholesome ingredients, it bakes into a soft, flexible flatbread you can use for sandwiches, breakfast wraps, or even mini pizzas. It’s naturally gluten-free, super filling, and incredibly easy to make!
Ingredients

1 cup cottage cheese (full-fat or low-fat)

2 large eggs

2 tbsp grated parmesan cheese (optional for flavor)

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp salt

Optional: 1 tbsp almond flour or oat flour for added texture (helps if your cottage cheese is very watery)

Cooking spray or parchment paper
Instructions

Preheat oven:
Set oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly grease it. -
Blend ingredients:
In a blender or food processor, combine cottage cheese, eggs, parmesan, seasonings, and optional flour. Blend until completely smooth. -
Spread the batter:
Pour the mixture onto the prepared baking sheet and use a spatula to spread into a thin, even circle or rectangle – about 1/4 inch thick. -
Bake:
Bake for 25–30 minutes, or until the edges are golden brown and the center is set. For a crispier texture, you can flip it carefully and bake for another 5–10 minutes. -
Cool & use:
Let cool slightly before peeling off the parchment. Use as a wrap, top like a pizza, or cut into strips for dipping.

Make it dairy-free by using dairy-free cottage cheese and skipping parmesan.

Store leftovers in the fridge for up to 3 days. Reheat in a skillet or toaster oven for best texture.
