- Chocolate Cakes:
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/4 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- Filling:
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 1/2 cups marshmallow creme (or fluff)
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, beat butter and brown sugar until fluffy. Add egg and vanilla, beating until well combined.
- Alternate adding dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix just until combined.
- Scoop tablespoons of batter onto prepared baking sheets, spacing about 2 inches apart. Flatten slightly with the back of the spoon.
- Bake 10–12 minutes or until set. Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
- For the filling, beat butter and powdered sugar until smooth. Add marshmallow creme and vanilla, beating until fluffy.
- Spread or pipe filling onto the flat side of half the cookies. Top with remaining cookies to create sandwiches.
- Serve immediately or chill for a firmer texture.
Notes
- You can use cream cheese instead of butter in the filling for a tangier version.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
- Freeze unfilled cookies for longer storage and assemble later.
