- 1 can (28 oz or 800g) crushed tomatoes
- 1/2 cup Kalamata olives, pitted and halved
- 2 tablespoons capers, drained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Prepare the Fish:
- Pat the fish fillets dry with paper towels and season both sides lightly with salt and pepper.
- Sear the Fish:
- In a large skillet over medium-high heat, heat 1 tablespoon of olive oil.
- Add the fish fillets and sear for about 2-3 minutes per side until lightly browned.
- Remove the fish from the skillet and set aside.
- Prepare the Sauce:
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Sautรฉ the chopped onion over medium heat until translucent, about 5 minutes.
- Add the minced garlic, chopped anchovies (if using), and red pepper flakes. Sautรฉ for an additional 1-2 minutes until fragrant.
- Add Tomatoes and Seasonings:

- Add the olives, capers, oregano, and thyme.

- Season with salt and freshly ground black pepper to taste.
- Combine Fish and Sauce:
- Return the seared fish fillets to the skillet, nestling them into the sauce.
- Spoon some sauce over the fish.
- Cover the skillet and let the fish simmer in the sauce for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
