Instructions

  1. Prepare the Fish:
    • Pat the fish fillets dry with paper towels and season both sides lightly with salt and pepper.
  2. Sear the Fish:
    • In a large skillet over medium-high heat, heat 1 tablespoon of olive oil.

    • Remove the fish from the skillet and set aside.

    • In the same skillet, add the remaining 1 tablespoon of olive oil.

  4. Add Tomatoes and Seasonings:

    • Add the olives, capers, oregano, and thyme.
