Description

Soft, fluffy potato rolls that are perfect for dinner or making sandwiches, with a tender crumb thanks to mashed potatoes.


Ingredients

  • 1 cup warm milk
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 cup mashed potatoes (plain, no butter or milk added)
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 1/2 teaspoons salt
  • 4 to 4 1/2 cups all-purpose flour
  • Additional melted butter for brushing

Instructions

  1. In a large bowl, combine the warm milk, yeast, and sugar. Let it sit for 5-10 minutes until foamy.
  2. Add the mashed potatoes, melted butter, egg, and salt. Mix until combined.
  3. Gradually add the flour, one cup at a time, mixing until a soft dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
  6. Punch down the dough and divide it into 12-15 equal pieces. Shape each piece into a ball and place on a greased baking sheet or in a baking dish.
  7. Cover and let the rolls rise again for about 30-40 minutes until puffy.
  8. Preheat the oven to 375°F (190°C).
  9. Bake the rolls for 15-18 minutes, or until golden brown on top.
  10. Brush the warm rolls with melted butter before serving.

Notes

  • Make sure the mashed potatoes are smooth and lump-free for best texture.
  • You can use leftover plain mashed potatoes for this recipe.
  • For extra richness, brush rolls with butter before and after baking.
