- 1 cup warm milk
- 2 1/4 teaspoons active dry yeast
- 1/4 cup granulated sugar
- 1/2 cup mashed potatoes (plain, no butter or milk added)
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 1/2 teaspoons salt
- 4 to 4 1/2 cups all-purpose flour
- Additional melted butter for brushing
Instructions
- In a large bowl, combine the warm milk, yeast, and sugar. Let it sit for 5-10 minutes until foamy.
- Add the mashed potatoes, melted butter, egg, and salt. Mix until combined.
- Gradually add the flour, one cup at a time, mixing until a soft dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
- Punch down the dough and divide it into 12-15 equal pieces. Shape each piece into a ball and place on a greased baking sheet or in a baking dish.
- Cover and let the rolls rise again for about 30-40 minutes until puffy.
- Preheat the oven to 375°F (190°C).
- Bake the rolls for 15-18 minutes, or until golden brown on top.
- Brush the warm rolls with melted butter before serving.
Notes
- Make sure the mashed potatoes are smooth and lump-free for best texture.
- You can use leftover plain mashed potatoes for this recipe.
- For extra richness, brush rolls with butter before and after baking.
