Description

Garlic Butter Bacon Cheeseburger Rollups combine all the classic flavors of a cheeseburger—juicy beef, crispy bacon, gooey cheese—wrapped in soft dough and brushed with savory garlic butter. These rollups make for a crowd-pleasing appetizer, game-day snack, or a fun main course for the family.

For the Rollups:

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 6 strips bacon, cooked and crumbled
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (13.8 oz) refrigerated pizza dough or crescent dough sheet
  • 1 1/2 cups shredded cheddar cheese

For the Garlic Butter:

  • 4 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Prepare the Filling – In a large skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate, then crumble once cooled. Drain all but 1 tablespoon of bacon fat from the skillet. Add chopped onion and cook until soft, about 2-3 minutes. Add garlic and ground beef, cooking until the beef is browned and cooked through. Drain excess fat, then stir in ketchup, mustard, crumbled bacon, salt, and pepper. Set aside and let cool slightly.
  2. Prepare the Dough – Roll out the refrigerated pizza dough (or crescent dough sheet) on a lightly floured surface into a rectangle, roughly 12×8 inches.
  3. Add the Filling and Cheese – Evenly spread the cooled beef and bacon mixture over the dough. Sprinkle shredded cheddar cheese over the filling.
  4. Roll and Slice – Starting from the long end, tightly roll up the dough into a log. Pinch the seam to seal, then slice into 1-inch thick rounds.
  5. Arrange and Bake – Preheat your oven to 375°F (190°C). Place the rollups cut side down on a parchment-lined baking sheet, about 1 inch apart. Bake for 16-18 minutes, or until golden brown and cooked through.
  6. Make the Garlic Butter – While the rollups are baking, combine melted butter, minced garlic, and parsley in a small bowl.
  7. Finish and Serve – As soon as the rollups come out of the oven, brush each one generously with garlic butter. Serve warm, optionally with dipping sauces like ketchup or ranch.
