- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional, for a bit of heat)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 8 oz fettuccine or your favorite pasta
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside. - Cook the chicken:
Heat the olive oil in a large skillet over medium heat. Season the chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for 5-6 minutes, until golden and fully cooked. Remove the chicken from the skillet and set aside. - Prepare the sauce:
In the same skillet, add the minced garlic and red pepper flakes. Sautรฉ for 1-2 minutes until fragrant. Stir in the chicken broth and bring to a simmer, scraping up any brown bits from the pan. - Make the creamy Parmesan sauce:
Lower the heat and slowly stir in the heavy cream. Let the sauce simmer for 2-3 minutes. Add the grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce thickens. - Combine and serve:
Add the cooked chicken back to the skillet, stirring to coat it in the sauce. Then add the cooked pasta, tossing everything together until evenly mixed. Season with additional salt and pepper, if needed. - Garnish and serve:
Remove from heat and garnish with fresh parsley. Serve hot, and enjoy!
Notes
- You can substitute half-and-half for the heavy cream if you want a lighter sauce.
