Prepare the Marinade:
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until well combined.

Marinate the Cod:
- Season the cod fillets lightly with salt and pepper on both sides.
- Place the fillets in a shallow dish or a resealable plastic bag.
- Pour the marinade over the cod, ensuring each fillet is thoroughly coated.
- Cover the dish or seal the bag and let it marinate in the refrigerator for at least 30 minutes, allowing the flavors to meld.

Cook the Cod:
- Preheat your oven to 375ยฐF (190ยฐC).
- Heat a large oven-safe skillet over medium-high heat. Add a small amount of oil to the pan.
- Remove the cod fillets from the marinade, allowing any excess to drip off, and reserve the marinade for later use.
- Place the fillets in the hot skillet and sear for about 2 minutes on each side, until they develop a light golden crust.
- Pour the reserved marinade over the cod fillets in the skillet.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the cod is opaque and flakes easily with a fork.

- Plate the cod fillets and spoon any remaining glaze from the skillet over the top.
