Ingredients

Units Scale
  • For the Crust:

    • 24 Golden Oreo cookies, crushed
    • 1/4 cup unsalted butter, melted
  • For the Cheesecake Filling:

    • 16 oz (2 packages) cream cheese, softened
    • 1/2 cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • 1/4 cup sour cream
    • 1 cup fresh strawberries, diced

Instructions

  1. Prepare the Crust:

    1. Preheat your oven to 350ยฐF (175ยฐC). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
    2. In a food processor, pulse the Golden Oreos into fine crumbs. Alternatively, crush them using a rolling pin.
    3. Mix the crushed cookies with the melted butter until well combined.
    4. Press the mixture firmly into the bottom of the prepared pan to form an even crust.
    5. Bake the crust for 8-10 minutes, then set aside to cool slightly.
  2. Make the Cheesecake Filling:

    1. In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    2. Add the eggs, one at a time, mixing well after each addition.
    3. Stir in the vanilla extract and sour cream until fully incorporated.
    4. Gently fold in the diced strawberries.
  3. Assemble and Bake:

    1. Pour the cheesecake filling over the pre-baked crust and spread it evenly with a spatula.
    2. Bake for 25-30 minutes, or until the cheesecake is set and slightly jiggly in the center.
    3. Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
  4. Serve:

    1. Once chilled, lift the cheesecake out of the pan using the parchment overhang.
    2. Cut into bars and serve. Enjoy!

Notes

  • For a smoother texture, make sure the cream cheese is fully softened before mixing.
  • You can garnish these bars with extra strawberries or a drizzle of white chocolate for added sweetness.
