Instructions
Marinate the chicken:
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken pieces and toss to coat. Cover and marinate for at least 30 minutes (or up to 8 hours in the fridge).
2. Cook the fries:
Bake or air fry the fries according to package instructions until golden and crispy. Once done, transfer to a large bowl or baking tray. Sprinkle with crumbled feta, oregano, and parsley.
3. Grill the skewers:
Preheat a grill or grill pan over medium-high heat. Thread marinated chicken onto skewers. Grill 8–10 minutes, turning occasionally, until fully cooked and slightly charred on the edges.
4. Assemble and serve:
Serve chicken skewers hot alongside feta fries. Add optional sides like tzatziki, pita bread, and fresh veggies. Squeeze lemon over everything before eating!
Notes
-
Soak wooden skewers in water for 20–30 minutes before grilling to prevent burning.
-
Make it spicy by adding a pinch of chili flakes to the marinade.
-
Use sweet potato fries for a twist!
