- 4 bratwurst sausages
- 1 yellow squash, cut into 1-inch pieces
- 1 zucchini, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 1 red bell pepper, cut into 1-inch pieces
- 8 oz mushrooms
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the Marinade:ย In a large bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper.
- Marinate the Vegetables:ย Add the yellow squash, zucchini, red onion, red bell pepper, and mushrooms to the bowl. Toss to coat the vegetables evenly with the marinade. Cover and let them marinate for at least 30 minutes.
- Preheat the Grill:ย Set your grill to medium-high heat.
- Prepare the Bratwurst:ย While the vegetables are marinating, precook the bratwurst according to the package instructions. Once cooked, cut them into 1-inch pieces.
- Assemble the Kabobs:ย Thread the marinated vegetables and bratwurst pieces onto skewers, alternating between the two.
- Grill the Kabobs:ย Place the assembled skewers on the preheated grill. Cook for about 10-15 minutes, turning every 5 minutes, until the vegetables are tender and have a nice char, and the bratwurst is heated through.
- Serve:ย Remove the kabobs from the grill and serve hot. Enjoy!
Notes
- If using wooden skewers, soak them in water for at least 30 minutes before assembling to prevent them from burning on the grill.
- Feel free to substitute or add other vegetables like cherry tomatoes or green bell peppers based on your preference.
