Scale
For the Grilled Chicken Bites
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Creamy Garlic Sauce
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 cloves garlic, minced or grated
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Marinate the Chicken: In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper. Add the chicken pieces and toss well to evenly coat. Cover and refrigerate for at least 20 minutes, or up to 2 hours for deeper flavor.
- Prepare the Creamy Garlic Sauce: While the chicken marinates, whisk together mayonnaise, sour cream, minced garlic, lemon juice, parsley, salt, and pepper in a small bowl. Taste and adjust seasoning as needed. Cover and chill until ready to serve.
- Preheat the Grill: Heat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
- Grill the Chicken Bites: Thread the chicken pieces onto skewers (if using wooden skewers, soak them in water for 15 minutes beforehand). Place skewers on the grill and cook for 4โ5 minutes per side, or until the chicken is cooked through and has nice grill marks.
- Serve: Transfer the grilled chicken bites to a platter. Serve hot alongside the creamy garlic sauce for dipping or drizzling. Garnish with extra parsley if desired.
Notes
- You can substitute chicken thighs for breast for an even juicier bite.
- The marinade also works well with shrimp or tofu for a different protein option.
- The creamy garlic sauce can be made up to 2 days ahead of time.
- For added flavor, try adding a pinch of cayenne or smoked salt to the marinade.
- Serve with warm pita, fresh veggies, or as part of a salad bowl.
