Description

Grilled Sweet Potatoes are a flavorful and healthy side dish, perfect for BBQs or summer dinners. Sliced sweet potatoes are tossed in olive oil and seasonings, then cooked to tender, caramelized perfection on the grill, making them slightly smoky and irresistibly delicious.

Ingredients

Scale

For the Sweet Potatoes

  • 2 large sweet potatoes, scrubbed

For the Marinade

  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

For Serving (Optional)

  • Fresh chopped parsley, for garnish
  • 1 tablespoon crumbled feta cheese
  • Lime wedges

Instructions

  1. Slice the sweet potatoes Carefully slice the sweet potatoes into 1/2-inch thick rounds. Uniform slices help ensure all pieces cook evenly on the grill.
  2. Pre-cook the sweet potatoes Bring a pot of salted water to a boil. Add the sweet potato slices and simmer for 4-5 minutes just until barely tender, then drain. This ensures the centers cook through on the grill without burning the outsides.
  3. Make the marinade In a large bowl, whisk together olive oil, smoked paprika, garlic powder, salt, and pepper. Add the sweet potato slices and gently toss until each piece is evenly coated.
  4. Preheat the grill Heat your grill to medium (about 375-400°F/190-204°C). Clean and oil the grates to prevent sticking.
  5. Grill the sweet potatoes Arrange the sliced sweet potatoes in a single layer on the grill. Close the lid and cook for 3-5 minutes per side, or until you see grill marks and the potatoes are tender to the center when pierced with a fork.
  6. Serve Transfer the grilled sweet potatoes to a serving platter. Garnish with parsley, crumbled feta, or a squeeze of fresh lime juice if desired. Serve hot.

Notes

  • If you skip boiling, slice potatoes very thin and grill over indirect heat for longer, but pre-cooking yields best texture.
  • Experiment with spices: try chili powder, cumin, or even a touch of cinnamon for a unique twist.
  • Great served warm or at room temperature, making them perfect for picnics or potlucks.
