  • 1/2 cup (120 ml) water
  • 4 large flour tortillas
  • 1 1/2 cups (150 g) shredded cheddar cheese
  • 1 cup (100 g) shredded Monterey Jack cheese
  • 2 tbsp (30 g) unsalted butter or oil
  • Optional toppings: salsa, sour cream, guacamole

Instructions

  1. In a skillet over medium heat, cook ground beef until no longer pink, breaking it apart.
  2. Add taco seasoning and water, stir, and simmer until sauce thickens, about 3โ€“4 minutes.
  3. Remove beef from skillet and set aside.
  4. Wipe skillet clean and heat over medium-low.
  5. Place a tortilla in skillet, sprinkle half with a mix of cheddar and Monterey Jack cheese.
  6. Spoon one-quarter of the seasoned beef over the cheese, then add a bit more cheese on top.
  7. Fold tortilla over to enclose filling.
  8. Cook 2โ€“3 minutes per side until golden brown and cheese melts, pressing gently with a spatula.
  9. Remove and let rest 1 minute before slicing into wedges.
  10. Repeat with remaining tortillas and filling.
