Zucchini Mixture:
- 2 medium zucchinis, diced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Cook Ground Turkey: In a large skillet, heat olive oil over medium-high heat. Add ground turkey, season with salt and pepper, and cook until browned, breaking it up with a spoon.
- Add Veggies: Push the turkey to the side of the skillet and add zucchini, bell pepper, onion, and garlic. Cook for 5-7 minutes until vegetables are tender.
- Season: Sprinkle paprika, oregano, salt, and pepper over the mixture. Stir to combine and cook for another 2-3 minutes.
- Serve: Garnish with fresh parsley and serve hot. Enjoy!
