Description

  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup frozen corn (optional)
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped (optional)
  • Salt and pepper, to taste
  • 1/2 cup tortilla chips, crushed (for topping, optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
  2. Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it apart, until browned and fully cooked, about 5-7 minutes.
  3. Add the diced onion and cook for an additional 3-4 minutes until softened.
  4. Stir in the taco seasoning, salsa, black beans, and corn (if using). Cook for another 2-3 minutes, allowing the flavors to combine. Season with salt and pepper to taste.
  5. Spread the turkey mixture evenly into the prepared casserole dish.
  6. Top the turkey mixture with sour cream, shredded cheddar, Monterey Jack cheese, and crushed tortilla chips (if using).
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions and cilantro, if desired.
