- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 packet taco seasoning
- 1/2 cup salsa
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup frozen corn (optional)
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped (optional)
- Salt and pepper, to taste
- 1/2 cup tortilla chips, crushed (for topping, optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
- Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it apart, until browned and fully cooked, about 5-7 minutes.
- Add the diced onion and cook for an additional 3-4 minutes until softened.
- Stir in the taco seasoning, salsa, black beans, and corn (if using). Cook for another 2-3 minutes, allowing the flavors to combine. Season with salt and pepper to taste.
- Spread the turkey mixture evenly into the prepared casserole dish.
- Top the turkey mixture with sour cream, shredded cheddar, Monterey Jack cheese, and crushed tortilla chips (if using).
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions and cilantro, if desired.
