  • 1/2 cup low-sodium chicken or vegetable broth (or water)

To Finish

  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep the vegetables. Wash and dice the potatoes into 1/2-inch pieces for even cooking. Chop the onion and bell pepper, and mince the garlic. Set all vegetables aside.
  2. Brown the ground turkey. Heat olive oil in a large skillet or sautรฉ pan over medium-high heat. Add the ground turkey, breaking it up with a spatula. Cook for 4-5 minutes, stirring occasionally, until the turkey is browned and mostly cooked through.
  3. Sautรฉ the aromatics. Add the chopped onion and cook for 2 minutes until translucent. Stir in the bell pepper and garlic, and cook for 1-2 minutes until fragrant.
  4. Add potatoes and seasonings. Stir in the diced potatoes, paprika, oregano, cumin, red pepper flakes (if using), salt, and black pepper. Mix well to coat the vegetables and turkey evenly in the spices.
  5. Simmer. Pour in the chicken or vegetable broth. Cover the pan, reduce the heat to medium-low, and simmer for about 15-20 minutes, stirring occasionally, until the potatoes are fork-tender and the mixture is thickened.
  6. Finish and serve. Taste and adjust salt or pepper if needed. Remove from heat, sprinkle with fresh parsley, and serve hot as is or with rice or bread.
