- For the Salad:
- 1 pound chicken breast, cut into small bite-sized pieces
- 1 tablespoon olive oil
- 4 cups mixed greens of your choice
- 1/4 small red onion, thinly sliced
- 3/4 cup cherry or grape tomatoes, halved
- 1/2 English cucumber, sliced or chopped
- 1 avocado, sliced
- 1/3 cup corn kernels (fresh or canned)
- For the Homemade Ranch Dressing:
- 1 cup plain non-fat Greek yogurt
- 2–3 cloves garlic, minced
- 2 teaspoons lemon juice
- 2 tablespoons finely chopped onion
- 1 tablespoon Dijon mustard
- 2 tablespoons fresh chives, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare the Dressing:
- In a small jar, combine the Greek yogurt, minced garlic, lemon juice, chopped onion, Dijon mustard, chives, parsley, dill, salt, and pepper. Secure the lid and shake well until all ingredients are well mixed.
- Marinate the Chicken:
- Place the chicken pieces in a bowl and pour about one-third of the prepared dressing over them. Mix to coat the chicken evenly. Cover and let it marinate in the refrigerator for at least 15 minutes. Reserve the remaining dressing for later use.
- Cook the Chicken:
- Heat the olive oil in a large non-stick pan over medium heat. Add the marinated chicken in a single layer and cook until golden brown and fully cooked, approximately 5-7 minutes. Remove from heat and let it cool slightly.
- Assemble the Salad:
- In a large salad bowl, arrange the mixed greens. Top with the cooked chicken, red onion slices, halved tomatoes, cucumber slices, avocado, and corn kernels.
- Dress the Salad:
- Just before serving, drizzle the reserved ranch dressing over the salad. Toss gently to combine all ingredients and ensure even dressing distribution.
