For the Pastry:
- 1 sheet puff pastry, thawed
- 1 egg (for egg wash)
- 1 tbsp water
For the Filling:
- 4 large eggs
- 1/4 cup heavy cream or milk
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup cooked bacon or sausage, crumbled
- 1/4 cup sautรฉed onions or bell peppers (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder (optional)
- 1 tbsp chopped fresh parsley or chives (optional)
Instructions

Preheat & Prepare Pastry:
- Preheat oven toย 375ยฐF (190ยฐC).
- Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a floured surface and cut intoย 4-6 equal squares.

Make the Filling:
- In a bowl, whisk together eggs, heavy cream, salt, pepper, and garlic powder.
- Stir in shredded cheese, cooked bacon/sausage, and any sautรฉed vegetables.

Fill the Pastries:
- Spoonย 1-2 tablespoonsย of filling into the center of each pastry square.
- Fold the pastry over into a triangle or rectangle shape, pressing edges to seal. Use a fork to crimp the edges.

Egg Wash & Bake:
- Beat 1 egg with 1 tbsp of water and brush it over the pastries for a golden crust.
- Place on the prepared baking sheet and bake forย 20-25 minutes, or until golden brown and puffed up.

Notes
- Make it vegetarianย by skipping the bacon/sausage and adding more veggies like spinach or mushrooms.
- Use store-bought doughย if you donโt have puff pastry. Crescent roll dough works great too!
- Make aheadย and freeze unbaked pastries for up toย 3 months. Bake straight from frozen, adding a few extra minutes to the bake time.
