- 1 1/2 lbs (680g) carrots, peeled and cut into sticks or left whole if small
- 3 tbsp unsalted butter, melted
- 2 tbsp honey
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme (or fresh thyme for garnish)
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat ovenย toย 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or foil for easy cleanup.
- Prepare the glaze: In a small bowl, whisk together melted butter, honey, minced garlic, salt, and pepper.
- Coat the carrots: Place the carrots on the baking sheet and drizzle the honey butter glaze over them. Toss to coat evenly.
- Roastย forย 25-30 minutes, flipping halfway through, until the carrots are tender and caramelized.
- Garnish & serve: Sprinkle with dried thyme (or fresh thyme) and chopped parsley if desired. Serve warm!
