Ingredients

Units Scale
  • 1 1/2 lbs (680g) carrots, peeled and cut into sticks or left whole if small
  • 3 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme (or fresh thyme for garnish)
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat ovenย toย 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Prepare the glaze: In a small bowl, whisk together melted butter, honey, minced garlic, salt, and pepper.
  3. Coat the carrots: Place the carrots on the baking sheet and drizzle the honey butter glaze over them. Toss to coat evenly.
  4. Roastย forย 25-30 minutes, flipping halfway through, until the carrots are tender and caramelized.
  5. Garnish & serve: Sprinkle with dried thyme (or fresh thyme) and chopped parsley if desired. Serve warm!

Notes

  • Carrot size matters: If using large carrots, slice them into sticks for even roasting. If using baby carrots, leave them whole.
  • Make it spicy: Add a pinch of red pepper flakes for a slight kick.
  • Vegan option: Use olive oil instead of butter.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave.
