For the Chicken and Glaze:

For the Roasted Vegetables:
- 2 cups baby carrots
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven:ย Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or foil for easy cleanup.
- Prepare the glaze:ย In a small bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, minced garlic, paprika, salt, and pepper until smooth.
- Marinate the chicken:ย Place the chicken breasts in a large bowl or zip-top bag. Pour half of the glaze over the chicken and coat well. Let it marinate for 15-20 minutes. Reserve the remaining glaze for later.
- Prep the vegetables:ย In a large bowl, toss the baby carrots, broccoli, red bell pepper, and zucchini with olive oil, garlic powder, Italian seasoning, salt, and pepper. Spread the vegetables evenly on the baking sheet.
- Add the chicken:ย Remove the chicken from the marinade and place it on the baking sheet with the vegetables.
