Honey Soy Baked Chicken and Veggies is a simple and flavorful one-pan meal featuring tender chicken thighs glazed with a sweet and savory honey soy sauce, baked alongside colorful vegetables for a wholesome dinner.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon rice vinegar (optional)
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, sliced
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. In a small bowl, whisk together soy sauce, honey, garlic, ginger, and rice vinegar.
  3. Place chicken thighs in a large bowl or zip-top bag. Pour half of the sauce over the chicken and marinate for at least 15 minutes (or up to overnight).
  4. Arrange the marinated chicken on the baking dish. Surround with chopped vegetables.
  5. Drizzle olive oil over the veggies and season with salt and pepper. Pour the remaining sauce over the entire dish.
  6. Bake for 35–40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
  7. Broil for an additional 2–3 minutes if desired for a crispier skin.
  8. Garnish with fresh parsley or green onions and serve hot.

Notes

  • Use boneless chicken if preferred, but reduce baking time by 5–10 minutes.
  • Add carrots or snap peas for more variety.
  • Serve over rice or noodles to soak up the sauce.
