Description

This Honeycrisp Apple Broccoli Salad is crisp, colorful, and full of flavor. It combines crunchy broccoli, sweet apples, smoky bacon, and a creamy tangy dressing. It’s a fresh twist on classic broccoli salad that’s perfect year-round!


Ingredients

For the Salad:

  • 4 cups broccoli florets, chopped small

  • 1 large Honeycrisp apple, diced

  • 1/2 cup dried cranberries

  • 1/2 cup roasted sunflower seeds or chopped pecans

  • 1/4 cup red onion, finely diced

  • 4-6 slices cooked bacon, chopped

  • 1/2 cup shredded sharp cheddar cheese (optional)

For the Dressing:

 

  • 3/4 cup mayonnaise

  • 1 1/2 tbsp apple cider vinegar

  • 1 tbsp honey or maple syrup

  • Salt and pepper, to taste


Instructions

  • Prep the ingredients:

    • Wash and chop broccoli into bite-sized pieces. Dice the apple (leave the skin on for color and crunch).

    • Chop bacon and red onion. Shred cheese if using.

  • Make the dressing:

    • In a small bowl, whisk together mayo, apple cider vinegar, and honey. Season with salt and pepper to taste.

  • Assemble the salad:

    • In a large bowl, combine broccoli, apple, cranberries, sunflower seeds, red onion, bacon, and cheese.

    • Pour dressing over the salad and toss until everything is well coated.

 

  • Chill and serve:

    • Let the salad sit in the fridge for at least 30 minutes before serving to let the flavors meld.


Notes

Make it lighter: Use half Greek yogurt and half mayo in the dressing.

 

Add a second apple or swap in pears for variation.

 

Stays fresh in the fridge for up to 3 days – great for make-ahead meals!
