Cookie Cups:

Instructions
- Prepare the Cookie Cups:
Preheat your oven to 350ยฐF (175ยฐC). Grease a mini muffin tin or line with paper liners. - In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In another bowl, sift together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Scoop 1 tablespoon of dough into each mini muffin cavity. Press the dough gently to form a cup shape.
- Bake for 10โ12 minutes or until the edges are set. Immediately after baking, use the back of a small spoon or a rounded tool to press down the centers, creating a deeper cup. Allow to cool completely before removing from the pan.
- Make the Ganache Filling:
Heat the heavy cream in a small saucepan until it just begins to simmer (do not boil). Pour it over the chocolate chips in a heatproof bowl. Let sit for 2โ3 minutes, then stir until smooth and glossy. Stir in vanilla extract. - Assemble the Cookie Cups:
