Description

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 small carrot, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth or vegetable broth
  • 3/4 cup pastina (tiny star pasta)
  • Salt and pepper to taste
  • 1 egg (optional, whisked)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery and sauté for about 5–7 minutes until softened.
  2. Add garlic and cook for 1 more minute until fragrant.
  3. Pour in the broth and bring to a boil.
  4. Stir in the pastina and reduce heat to a simmer. Cook for 5–6 minutes or until the pasta is tender, stirring occasionally.
  5. If using, slowly drizzle in the whisked egg while stirring to create egg ribbons.
  6. Season with salt and pepper to taste.
  7. Ladle into bowls and top with grated Parmesan and parsley. Serve warm.
