- 4 boneless, skinless chicken breasts
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground thyme
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 8 small corn or flour tortillas
- 1 cup shredded cabbage (or coleslaw mix)
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
- 1/2 cup diced mango (optional, for garnish)
Instructions
- In a small bowl, combine jerk seasoning, olive oil, lime juice, garlic powder, allspice, thyme, and cayenne pepper (if using). Rub the mixture evenly over the chicken breasts and let them marinate for at least 30 minutes, or overnight for more flavor.
- Preheat a grill or grill pan to medium-high heat. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing it into thin strips.
- In a separate bowl, mix together the shredded cabbage, cilantro, mayonnaise, apple cider vinegar, honey, salt, and pepper to make the slaw. Adjust the seasoning to taste.
- Warm the tortillas on the grill for about 30 seconds per side, then assemble the tacos by adding a few strips of jerk chicken to each tortilla, followed by a generous scoop of the slaw.
- Optional: Top with diced mango for a sweet contrast to the spicy chicken, and serve immediately.
Notes
- For a milder flavor, reduce the amount of cayenne pepper or skip it entirely.
- If you can’t find jerk seasoning, you can make your own by combining cinnamon, nutmeg, allspice, garlic powder, onion powder, and thyme.
- These tacos pair well with a side of rice and beans or grilled vegetables.
