For the Steak:
- 2 ribeye or sirloin steaks (about 1-inch thick)
- 1 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic, smashed
- 1 sprig fresh rosemary or thyme (optional)
- Salt and black pepper, to taste
For the Creamy Garlic Sauce:
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup beef broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Dijon mustard (optional, for depth of flavor)
- 1/2 tsp paprika (optional, for color and warmth)
- Salt and black pepper, to taste
- 1 tbsp chopped parsley (for garnish)

Prepare the Steak:
- Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat.

Sear the Steak:
- Add the steaks to the hot skillet and sear for about 3-4 minutes per side for medium-rare (adjust time for desired doneness).
- In the last minute of cooking, add butter, smashed garlic, and rosemary (if using). Spoon the melted butter over the steaks.
- Remove steaks from the pan and let them rest on a plate while you prepare the sauce.

Make the Creamy Garlic Sauce:
- In the same pan, reduce heat to medium and add butter.
- Stir in minced garlic and cook for about 30 seconds until fragrant.
- Pour in beef broth, scraping up any browned bits from the pan. Let it simmer for 2 minutes.
- Add heavy cream, Parmesan cheese, Dijon mustard, and paprika. Stir well and let it simmer for 3-4 minutes until slightly thickened.
- Taste and adjust seasoning with salt and black pepper.

- Slice the rested steak and place it on a serving plate.
- Pour the creamy garlic sauce over the steak and garnish with chopped parsley.
- Serve immediately with mashed potatoes, roasted veggies, or a fresh salad.
Notes
- For a lighter sauce, you can substitute half-and-half for heavy cream.
- If you prefer a thinner sauce, add more beef broth.
