Description

  • 2 ribeye or sirloin steaks (about 1-inch thick)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic, smashed
  • 1 sprig fresh rosemary or thyme (optional)
  • Salt and black pepper, to taste
For the Creamy Garlic Sauce:
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup beef broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Dijon mustard (optional, for depth of flavor)
  • 1/2 tsp paprika (optional, for color and warmth)
  • Salt and black pepper, to taste
  • 1 tbsp chopped parsley (for garnish)

Instructions

  • Prepare the Steak:

    • Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.
    • Heat olive oil in a large skillet over medium-high heat.
  • Sear the Steak:

    • Add the steaks to the hot skillet and sear for about 3-4 minutes per side for medium-rare (adjust time for desired doneness).
    • In the last minute of cooking, add butter, smashed garlic, and rosemary (if using). Spoon the melted butter over the steaks.
    • Remove steaks from the pan and let them rest on a plate while you prepare the sauce.
  • Make the Creamy Garlic Sauce:

    • In the same pan, reduce heat to medium and add butter.
    • Stir in minced garlic and cook for about 30 seconds until fragrant.
    • Pour in beef broth, scraping up any browned bits from the pan. Let it simmer for 2 minutes.
    • Add heavy cream, Parmesan cheese, Dijon mustard, and paprika. Stir well and let it simmer for 3-4 minutes until slightly thickened.
    • Taste and adjust seasoning with salt and black pepper.
  • Serve:

    • Slice the rested steak and place it on a serving plate.
    • Pour the creamy garlic sauce over the steak and garnish with chopped parsley.
    • Serve immediately with mashed potatoes, roasted veggies, or a fresh salad.

Notes

  • For a lighter sauce, you can substitute half-and-half for heavy cream.
  • If you prefer a thinner sauce, add more beef broth.
