Description

These Keto Blondies are the perfect low-carb treat, packed with rich, buttery flavor and a hint of vanilla. Theyโ€™re moist, chewy, and slightly crispy on the edges, making them an ideal dessert for anyone following a keto diet. With almond flour and sugar-free sweeteners, these blondies satisfy your sweet tooth without the carbs!

Ingredients

Units Scale
  • 1 1/2 cups almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/3 cup sugar-free sweetener (like erythritol or monk fruit)
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup sugar-free chocolate chips (optional)

Instructions

  • Preheat your oven to 350ยฐF (175ยฐC). Line an 8ร—8-inch baking dish with parchment paper or grease it lightly.
  • In a large bowl, mix together the almond flour, shredded coconut, sugar-free sweetener, salt, and baking powder.
  • In a separate bowl, whisk the eggs, melted butter, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. If youโ€™re using sugar-free chocolate chips, fold them in at this stage.
  • Transfer the batter to the prepared baking dish, spreading it out evenly.
  • Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the blondies cool in the pan for about 10 minutes before cutting them into squares. Enjoy!

Notes

  • Store any leftover blondies in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
  • You can customize these blondies by adding chopped nuts or a dash of cinnamon for extra flavor.
  • Use a sweetener that measures like sugar to get the right texture.
