Description

Lasagna Roll-Ups are a fun twist on traditional lasagna, with noodles rolled around a cheesy filling and topped with marinara sauce and melted cheese.


Ingredients

  • 10 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Cook lasagna noodles according to package directions. Drain and lay flat on parchment paper or a clean surface.
  3. In a medium bowl, mix ricotta cheese, egg, 1 cup mozzarella, Parmesan, Italian seasoning, garlic powder, salt, and pepper.
  4. Spread a thin layer of ricotta mixture onto each noodle, then roll them up from one end to the other.
  5. Spread 1 cup of marinara sauce on the bottom of a 9×13-inch baking dish.
  6. Place the roll-ups seam-side down in the baking dish.
  7. Top with remaining marinara sauce and sprinkle with remaining mozzarella cheese.
  8. Cover with foil and bake for 20 minutes, then uncover and bake an additional 10 minutes until cheese is bubbly and slightly golden.
  9. Garnish with fresh basil or parsley before serving, if desired.

Notes

  • You can prepare the roll-ups ahead and refrigerate until ready to bake.
  • Add cooked spinach or ground meat to the filling for variation.
  • Use gluten-free noodles for a gluten-free option.
