For the Crust:
- 3 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, cubed and chilled
For the Pecan Filling:
- 4 large eggs
- 1 1/2 cups light corn syrup
- 1 cup packed brown sugar
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 2 cups pecan halves or pieces
Instructions
- Prepare the Crust:
- Preheat your oven to 350ยฐF (175ยฐC).
- In a large bowl, combine the flour, granulated sugar, and salt.
- Add the chilled, cubed butter to the dry ingredients. Using a pastry cutter or your hands, mix until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of a greased 9ร13-inch baking dish to form the crust.
- Bake for 15-20 minutes, or until the crust is lightly golden. Remove from the oven and set aside to cool slightly.
- Prepare the Pecan Filling:
- In a large mixing bowl, whisk together the eggs, light corn syrup, brown sugar, vanilla extract, and salt until smooth.
- Stir in the pecans until they are evenly coated with the mixture.
- Assemble and Bake:
- Pour the pecan filling over the pre-baked crust, spreading it evenly.
- Return the baking dish to the oven and bake for an additional 30-35 minutes, or until the filling is set and no longer jiggles in the center.
- Remove from the oven and allow the bars to cool completely in the pan before slicing.
