Description

Lemon Truffles are bright, zesty, and creamy no-bake treats made with white chocolate and lemon zest. These bite-sized desserts are perfect for spring gatherings, gifting, or a refreshing after-dinner sweet.

Ingredients

Units Scale
  • 8 oz white chocolate, finely chopped
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. In a heatproof bowl, combine white chocolate, heavy cream, and butter.
  2. Melt over a double boiler or in the microwave in 20-second intervals, stirring until smooth.
  3. Stir in lemon juice, lemon zest, and vanilla extract. Mix well.
  4. Refrigerate the mixture for 2–3 hours, or until firm enough to scoop.
  5. Use a small cookie scoop or spoon to portion and roll into balls.
  6. Roll each truffle in powdered sugar until coated.
  7. Store in the refrigerator until ready to serve.

Notes

  • Use high-quality white chocolate for best results.
  • You can roll the truffles in shredded coconut or crushed cookies instead of powdered sugar for variety.
  • Keep chilled for a firmer texture, especially in warm weather.
