Instructions
- In a heatproof bowl, combine white chocolate, heavy cream, and butter.
- Melt over a double boiler or in the microwave in 20-second intervals, stirring until smooth.
- Stir in lemon juice, lemon zest, and vanilla extract. Mix well.
- Refrigerate the mixture for 2–3 hours, or until firm enough to scoop.
- Use a small cookie scoop or spoon to portion and roll into balls.
- Roll each truffle in powdered sugar until coated.
- Store in the refrigerator until ready to serve.
