Description

  • 50g unsalted butter, plus extra for greasing
  • 1 large egg
  • 1 large egg yolk
  • 50g caster sugar
  • 30g plain flour, sifted
  • Cocoa powder, for dusting

Instructions

  1. Prepare the ramekins:ย Preheat the oven to 200ยฐC (180ยฐC fan) or 400ยฐF. Grease two small ramekins with butter and dust with cocoa powder, ensuring the insides are well coated. Tap out any excess.
  2. Melt chocolate and butter:ย In a heatproof bowl, combine the chopped Lindt chocolate and butter. Place over a pan of gently simmering water, ensuring the bowl doesnโ€™t touch the water. Stir until smooth, then set aside to cool slightly.
  3. Make the batter:ย In a separate bowl, whisk together the egg, egg yolk, and sugar until thick, pale, and fluffy (about 3-4 minutes).
  4. Combine ingredients:ย Gently fold the melted chocolate mixture into the egg mixture, then fold in the sifted flour until just combined. Avoid overmixing.
  5. Fill the ramekins:ย Divide the batter evenly between the prepared ramekins. Place them on a baking tray.
  6. Bake:ย Bake for 10-12 minutes, or until the tops are set but the centers remain soft.
  7. Serve immediately:ย Run a knife gently around the edges to loosen the fondants. Invert onto serving plates or serve directly in the ramekins. Enjoy warm with your favorite accompaniments.

Notes
