- 50g Lindt dark chocolate (70% cocoa recommended), chopped
- 50g unsalted butter, plus extra for greasing
- 1 large egg
- 1 large egg yolk
- 50g caster sugar
- 30g plain flour, sifted
- Cocoa powder, for dusting
Instructions
- Prepare the ramekins:ย Preheat the oven to 200ยฐC (180ยฐC fan) or 400ยฐF. Grease two small ramekins with butter and dust with cocoa powder, ensuring the insides are well coated. Tap out any excess.
- Melt chocolate and butter:ย In a heatproof bowl, combine the chopped Lindt chocolate and butter. Place over a pan of gently simmering water, ensuring the bowl doesnโt touch the water. Stir until smooth, then set aside to cool slightly.
- Make the batter:ย In a separate bowl, whisk together the egg, egg yolk, and sugar until thick, pale, and fluffy (about 3-4 minutes).
- Combine ingredients:ย Gently fold the melted chocolate mixture into the egg mixture, then fold in the sifted flour until just combined. Avoid overmixing.
- Fill the ramekins:ย Divide the batter evenly between the prepared ramekins. Place them on a baking tray.
- Bake:ย Bake for 10-12 minutes, or until the tops are set but the centers remain soft.
- Serve immediately:ย Run a knife gently around the edges to loosen the fondants. Invert onto serving plates or serve directly in the ramekins. Enjoy warm with your favorite accompaniments.
Notes
- You can prepare the batter ahead of time and refrigerate the filled ramekins. Just add 1-2 minutes to the baking time when cooking from chilled.
- For a slightly different flavor, use Lindt milk or hazelnut chocolate instead of dark chocolate.
