Description

These Loaded Smothered Beef Burritos are packed with seasoned ground beef, beans, rice, and cheese, then rolled in flour tortillas, smothered in enchilada sauce, topped with more cheese, and baked to perfection. It’s a Tex-Mex favorite that’s easy to customize and guaranteed to satisfy!

 


Ingredients

For the Filling:

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade mix)

1/2 cup water

1 cup cooked rice (white or Mexican-style)

1 cup canned black beans or pinto beans, drained and rinsed

1 cup shredded cheddar or Mexican blend cheese

For Assembly:

6 large flour tortillas (10-inch)

1 (10 oz) can red enchilada sauce (or more if desired)

1 1/2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

Optional toppings: sour cream, chopped cilantro, diced tomatoes, sliced jalapeños, green onions


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  • Cook the beef:
    In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is soft, about 6–8 minutes. Drain excess grease.

  • Season and mix:
    Stir in garlic, taco seasoning, and water. Simmer for 2–3 minutes until thickened. Remove from heat and stir in rice, beans, and 1 cup shredded cheese.

  • Assemble burritos:
    Spoon the beef mixture evenly into the center of each tortilla. Roll up burrito-style, folding in sides and rolling tightly. Place seam-side down in the baking dish.

  • Smother and bake:
    Pour enchilada sauce over the burritos and sprinkle with remaining cheese. Cover loosely with foil and bake for 20 minutes. Uncover and bake for another 5–10 minutes, until cheese is bubbly and golden.

 

  • Serve:
    Top with sour cream, chopped cilantro, or your favorite toppings. Serve hot!


Notes

  • For a spicier version, use hot enchilada sauce or add diced jalapeños to the filling.

  • These freeze great! Assemble and freeze before baking, then bake from frozen, covered with foil, at 375°F for 45–50 minutes.

 

  • You can also use shredded cooked beef, chicken, or ground turkey.
