  • 16 oz (450g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 2 tsp pure vanilla extract

Instructions

  1. Prepare the Cake Batter:
    • Preheat your oven to 350ยฐF (175ยฐC). Grease and line three 8-inch (20cm) round cake pans with parchment paper.
    • In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
    • In a separate bowl, whisk together the buttermilk, oil, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until combined.
    • Slowly pour in the hot coffee while mixing on low speed. The batter will be thin; this is normal.
  2. Bake the Cakes:
    • Divide the batter evenly between the prepared pans. Bake for 25โ€“30 minutes, or until a toothpick inserted in the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  3. Make the Frosting:
    • In a large bowl, beat the cream cheese and butter together until smooth and creamy.
    • Gradually add the powdered sugar, one cup at a time, beating on low speed. Once incorporated, increase the speed to medium and beat until fluffy. Stir in the vanilla extract.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread an even layer of frosting on top. Repeat with the second and third layers, then frost the top and sides of the cake.
