For the Cake:
- 2 1/2 cups (310g) all-purpose flour
- 1 cup (80g) unsweetened cocoa powder
- 2 cups (400g) granulated sugar
- 1 1/2 tsp baking powder
- 1 tsp baking soda

- 1 cup (240ml) buttermilk, room temperature
- 1/2 cup (120ml) vegetable oil
- 3 large eggs, room temperature
- 2 tsp pure vanilla extract
- 1 cup (240ml) hot coffee or boiling water
For the Cream Cheese Frosting:
- 16 oz (450g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 4 cups (480g) powdered sugar, sifted
- 2 tsp pure vanilla extract
Instructions
- Prepare the Cake Batter:
- Preheat your oven to 350ยฐF (175ยฐC). Grease and line three 8-inch (20cm) round cake pans with parchment paper.
- In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, oil, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until combined.
- Slowly pour in the hot coffee while mixing on low speed. The batter will be thin; this is normal.
- Bake the Cakes:
- Divide the batter evenly between the prepared pans. Bake for 25โ30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Make the Frosting:
- In a large bowl, beat the cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, beating on low speed. Once incorporated, increase the speed to medium and beat until fluffy. Stir in the vanilla extract.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread an even layer of frosting on top. Repeat with the second and third layers, then frost the top and sides of the cake.
- Smooth the frosting and decorate as desired (e.g., chocolate shavings or a dusting of cocoa powder).
- Serve:
